I don't want to have to uninstall my licensed version to try the new version (30 day trial). Will I have to uninstall my existing copy to evaluatuate the new version?

You can install the v2.0 demo side by side with a 1.0.2005.1 version. Be aware that when you do so, VS.NET can make the wrong decision with NEW projects: it will probably reference the runtime libs of the wrong version. You've to correct the references in that case, which is a one-time effort.
